This miso is made in Kumamoto Prefecture using only soybeans, barley, and rice grown in Kumamoto's rich water and cold climate.
The combination of rice and barley miso creates the unique taste of Kyushu Kumamoto. The optimal maturation period gives the miso a soft, natural sweetness and flavor.
Only ingredients from Kumamoto Prefecture are used in this miso, and no additives are used to give it its natural flavor.
The koji making process, which is the most important step in miso production, is carried out by skilled technicians who have been following the traditional method for a long time.
